Can they open a letter whenever they want?

Once its date has come, yes. Set tomorrow’s date for letters they can open any time after.

Can I edit a sealed letter?

No. A sealed letter stays as you wrote it. You can delete your own letters.

Is there a limit?

No limit on letters, in the free version too.
